Founded by Umber Ahmad in 2014, the bakery was the perfect expertise of Umber’s business acumen, science education, and cultural experiences.
In 2019, Ahmad was nominated for the coveted James Beard Foundation baker awards. That alone is the accomplishment of a lifetime but Chef Ahmad is building the next great culinary experience with Mah-Ze-Dahr Bakery in NYC and the surrounding areas.
If Mah-Ze-Dahr’s mission is to take customers on a portal of discovery, they achieved that. Our team was taken on a journey that’s difficult to describe and even more challenging to write about.
We sampled their traditional cinnamon roll, at their West Village location. Levi, one of their team members, was kind enough to serve us and even gave us a quick history lesson on the bakery and their cinnamon rolls. Levi mentioned to us that customers, depending on where they are from, might refer to these delightful pastries as cinnamon buns.

Brioche Dough For The Win
The cinnamon rolls we ordered were made with brioche dough and had a generous amount of quality cinnamon throughout.
Brioche is an uncommon but excellent choice for baking cinnamon rolls. It’s light and tastes so rich because it’s made with an enriched dough, which gives it that soft texture and decadent taste.
